For the second time, the renowned Balinese restaurant, Dapur Bali Moela offered a special opportunity for eight students from Amisewaka – DLCC (“DLCC”) to participate in a cooking class. Led by Chef Yudi, the owner of Dapur Bali Moela and a respected community leader in Les Village, the students not only learned how to prepare traditional Balinese dishes but also gained insights into the philosophy and essential traits of being a chef.
“Controlling your emotions and staying calm in the kitchen is essential,” said Chef Yudi, explaining how a chef’s energy, whether positive or negative, can influence the taste of the food.
Chef Yudi taught the students to understand the role of each spice, whether as a main seasoning, an aromatic, or a natural flavor enhancer, eliminating the need for MSG. He also emphasized the importance of selecting ingredients carefully, such as using spices that are neither too young nor too old to achieve the best flavor.
During the session, students put their new knowledge into practice by cooking several traditional chicken-based dishes, including sate lilit ayam, sup ayam ares, lawar kacang panjang, and ayam sambal matah. Chef Yudi not only shared cooking techniques but also small secrets that made each dish even more special.
This activity was more than just a cooking class – it also conveyed cultural values and local wisdom. For DLCC students, it was a valuable experience, equipping them with skills and insights for their future in the culinary world while fostering a deeper appreciation for the art of cooking rooted in tradition and a love for local ingredients.
